Waffle Monkey, the Costa Rican-born breakfast and lunch brand, is preparing to open its fourth location in downtown Sarasota at 52 S Palm Ave, Sarasota, FL 34236. Owners Pete and Kathryn Collins told Business Debut they are aiming for a soft opening on May 25, followed by a grand opening on June 1.

The new café will serve gourmet Belgian waffles, Costa Rican coffee, sausage rolls wrapped in puff pastry, breakfast and lunch sandwiches, frappes, milkshakes, chai tea, and a fruit-based lunch item called the Monkey Bowl. Guests will have the choice between a traditional waffle mix and a vegan/gluten-free mix, made on a dedicated waffle iron to avoid cross-contamination.

The Sarasota shop will reflect Waffle Monkey’s jungle roots with a 28-by-10.5-foot mural and a cozy layout offering 44 seats indoors and 16 outdoors, with possible expansion for additional patio seating.

This will be the Collins’ first Waffle Monkey location. Other locations include Costa Rica, the Cayman Islands, and Bonita Springs. The original shop is famously known for a monkey that visits daily for fruit, inspiring the brand’s name.
